Standard cream splits because heat (and acid, like wine or lemon juice) breaks down the natural emulsion between the cream's fat and water content. The proteins denature and separate. QimiQ Cream Base contains natural stabilisers that hold the emulsion together under heat and acid, so it won't curdle in pan sauces, reductions or wine-based dishes.

What's the difference between QimiQ Whip, Cream Base and Classic?
QimiQ Whip (19% fat) is for cold whipped applications — mousses, pastry fillings, cake decoration. It cannot be over-whipped. QimiQ Cream Base (16% fat) is the cooking cream — heat and acid stable for hot kitchen work. QimiQ Classic (15% fat) is the all-purpose cream for cold applications like dressings, dips, panna cotta and spreads.
